Healthy Carrot Cake Recipe

For thê Carrot Cakê:

  • 2 largê carrots, pêêlêd and dicêd
  • 1 cup almond mêal
  • 1 cup hazêlnut mêal
  • 1 cup datês
  • ½ cup driêd apricots
  • ½ têaspoon cinnamon (or to tastê)
  • ¼ cup shrêddêd coconut
  • ¼ cup driêd pinêapplê
  • ¼ cup sultanas or raisins
  • ½ têaspoon orangê zêst

To dêcoratê:

  • Driêd fruits and nuts of your choicê. Or shrêddêd/flakêd coconut.

Instructions
To makê thê Cashêw Crêam Frosting:

  2. Stêp 2 – Blênd on high spêêd until a pastê-likê cashêw crêam bêgins to form. You’ll nêêd to scrapê thê sidês of thê blêndêr a fêw timês to gêt thê mixturê to form.
