STRAWBERRY LEMONADE LOAF



INGREDIENTS

  • 1 cúp granúlated súgar
  • zest + júice of one lemon
  • ½ cúp bútter, softened
  • 4 eggs
  • 1 cúp búttermilk
  • 1 teaspoon lemon extract
  • 1½ cúps strawberries, húlled and coarsely chopped
  • 3 cúps all púrpose floúr
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

INSTRUCTIONS

  1. Pre-heat the oven to 350. Bútter two 8 X 4½ loaf pans. Set aside.
  2. Add the súgar and lemon zest to a large bowl and rúb them together with yoúr fingers úntil the súgar is moist and fragrant.
  3. Beat the bútter and súgar together úntil it's nice and flúffy.
  4. Add the eggs one at a time, beating after each addition. Then add the lemon júice.
  5. Poúr in the búttermilk and mix úntil júst combined. Stir in the lemon extract.
  6. Fold the strawberries into the batter with a rúbber spatúla.
