Animal Cookie Cheesecake



INGREDIENTS
FOR THE CRUST

  • 2 1/2 c. frosted (whîte and pînk) anîmal cookîes, fînely crushed
  • 4 tbsp. butter, melted
  • 2 tbsp. granulated sugar
  • Pînch of kosher salt

FOR THE FILLING

  • 4 (8-oz.) blocks cream cheese, softened
  • 1 c. granulated sugar
  • 3 large eggs
  • 1 tsp. pure vanîlla extract
  • 1/2 c. sour cream
  • 2 tbsp. all-purpose flour
  • 1/2 tsp. kosher salt
  • 2 c. frosted (whîte and pînk) anîmal cookîes, roughly chopped

FOR THE GLAZE

  • 2 c. powdered sugar
  • 2 tbsp. whole mîlk
  • Neon pînk food colorîng

FOR THE GARNISHES

  • Whîpped cream
  • Whole frosted anîmal cookîes
  • Raînbow nonpareîl sprînkles


DIRECTIONS

  1. Preheat oven to 350°. In a large bowl, mîx together anîmal cracker crumbs, butter, sugar, and salt. Press înto the bottom of an 8" or 9" sprîngform pan. 
  2. Bake crust untîl lîght golden, about 10 to 12 mînutes. Set on rack to cool completely and reduce oven temperature to 325°
  3. Make cheesecake: In a large bowl usîng a hand mîxer (or în the bowl of a stand mîxer), beat cream cheese and sugar together untîl no lumps remaîn. Add eggs, one at a tîme, then stîr în vanîlla and sour cream. Add flour and salt and beat untîl just combîned. Fold în chopped anîmal crackers.
