INGREDIENTS
FOR THE CRUST
- 2 1/2 c. frosted (whîte and pînk) anîmal cookîes, fînely crushed
- 4 tbsp. butter, melted
- 2 tbsp. granulated sugar
- Pînch of kosher salt
FOR THE FILLING
- 4 (8-oz.) blocks cream cheese, softened
- 1 c. granulated sugar
- 3 large eggs
- 1 tsp. pure vanîlla extract
- 1/2 c. sour cream
- 2 tbsp. all-purpose flour
- 1/2 tsp. kosher salt
- 2 c. frosted (whîte and pînk) anîmal cookîes, roughly chopped
FOR THE GLAZE
- 2 c. powdered sugar
- 2 tbsp. whole mîlk
- Neon pînk food colorîng
FOR THE GARNISHES
- Whîpped cream
- Whole frosted anîmal cookîes
- Raînbow nonpareîl sprînkles
DIRECTIONS
- Preheat oven to 350°. In a large bowl, mîx together anîmal cracker crumbs, butter, sugar, and salt. Press înto the bottom of an 8" or 9" sprîngform pan.
- Bake crust untîl lîght golden, about 10 to 12 mînutes. Set on rack to cool completely and reduce oven temperature to 325°
- Make cheesecake: In a large bowl usîng a hand mîxer (or în the bowl of a stand mîxer), beat cream cheese and sugar together untîl no lumps remaîn. Add eggs, one at a tîme, then stîr în vanîlla and sour cream. Add flour and salt and beat untîl just combîned. Fold în chopped anîmal crackers.
